Silverton’s award-winning Sushi Bar menu gets energized with a Chef-driven Japanese experience…

On my return visit, I met with Executive Room Chef Shayne Galan and Silverton’s Executive Chef Nick Beesley. I took a seat at the ornate sushi bar, and the two gentlemen explained the concept of the Omakase Experience. According to Chef Galan, “Omakase is a Japanese word that means ‘to surrender,’ or ‘I’ll leave it up to you’.” In other words, the dish will be designed and created at the chef’s discretion.
Ingredients are chosen for Omakase (pronounced oh-MAH-kah-say) by their seasonal nature and are always the finest, freshest available. Each Omakase Experience contains the following: one sushi roll, ten pieces of nigiri, and four pieces of sashimi. They’re beautifully assembled and presented on a large platter. Mine came with a side of flames.
Nigiri, for those who don’t know, is a variation of sushi. A piece of raw fish such as mackerel, yellowfin, halibut, tuna, or salmon is layered atop a ball of vinegar sushi rice. Sushimi is a larger slice of the fish itself, served without rice. Either may be topped with wasabi and dipped in soy sauce.
As you can see, Omakase is an absolute feast for the sushi lover. It’s as flavorful as the colors suggest, and the presentation makes your meal feel like an event. It’s currently priced at $80.
The final part of the full Omakase Experience is the Sake Bomb, a cocktail made by dropping a shot glass filled with sake into a glass of beer. As I wasn’t imbibing that evening, it was necessary to rely on a stock photo to give you an idea.

While I may have passed on the Sake Bombs, nobody ever declines dessert, right? I went with Lychee Panna Cotta ($10), made with yuzu cream, pandan meringue, and fresh fruits. Mochi Ice Cream ($6) comes in mango, strawberry, and green tea flavors.

As with Mi Casa Cantina Grill, the decor at Su Casa Sushi Bar is contemporary, warm, inviting, and eye-catching. The exemplary service and atmosphere are beyond what you’d expect for such a reasonably-priced menu. This spring’s new menu will give visitors old and new a chance to discover for themselves.
Chef Nick Beesley oversees all of the culinary offerings at Silverton Casino. They include award-winning Twin Creeks Steakhouse, casual-dining Sundance Grill, and Chef Ray Kwong’s WuHu Noodle. In regards to Su Casa’s new offerings, Chef Beesley stated “We’ve energized the menu, adding nearly three dozen new options, including a wide selection of nigiri, sashimi, signature sushi rolls, noodles, entrees, and more.”
Here are a few of the latest additions:
● Ahi katsu ‘starter’, deep-fried, nori-wrapped tuna, served with mixed greens and ginger dressing. ($23)
● Crispy tuna, made with crispy rice, spicy tuna, tuna sashimi, garlic chips, and sweet soy glaze ($20)
● Orange dream roll, made with tempura salmon, cream cheese, avocado, Cajun-seared salmon, lemon slice, red onion, and truffle ponzu ($16)
● Prime New York steak katsu sando, a steak katsu and samurai katsu sauce served with furikake French fries ($34)
● Pork belly sizzle, made with sweet chili, ginger-glazed pork belly, and snow peas, served on a sizzling ishiyaki stone ($20)
Of course, all of your favorites are available from the full menu. The list of starters includes Miso, Spicy Garlic Edamame, Salmon Skin Salad, Tempura Soft Shell Crab, and Ahi Poke Nachos.
Ahi Poke Bowls like Ahi-Tuna, Hamachi, and Salmon come with rice or matcha green tea soba noodles. Sushi Burritos are huge…my favorite is the “Big Island“, made with yellowtail, spicy tuna, guacamole, cilantro, wonton strips, and Asian slaw.
There are Traditional and Fried Sushi Rolls, Su Casa Signature Rolls, Char Su Pork Ramen, and Seafood Udon. Entrees range from Yakitori Chicken Skewers and Kalbi Ribs to Miso Glazed Seabass and the aforementioned Prime NY Steak Katsu Sando. And of course, the ever-popular Bento Box.
