Gaetano’s Ristorante is a family-owned Italian eatery in Henderson. It’s known for its high-quality meats and fresh pasta.
On February 25, Gaetano will partner with Bava Winery to host a prix fixe dinner and wine pairing. Nick and Sarah Palmeri, the second-generation owners of the restaurant, and Giorgio Bava, a sixth-generation owner of Bava Winery, will lead the guests through the curated, four-course experience.

Welcome Drink
A glass of Bava Moscato d’Asti “Bass Tuba” 2023 sets the mood. This sparkling wine evokes the taste of fresh peach and apricot.

First Course
Vitello Tonnato, a classic Italian meal, will be the first course. It traditionally consists of thinly sliced veal covered with a creamy tuna sauce. Vitello Tonnato will be paired with the crisp and zesty notes of Bava Gavi 2021.

The Ricotta & Hazelnut Ravioli with Brown Butter Sage Sauce brings a buttery, nutty taste. You’ll enjoy the flavor alongside a glass of Bava Ruché Rosso 2023 red wine with floral and red berry aromas.

The final savory course is Braised Lamb Shank served with Gorgonzola Polenta. The fruity profile of the vintages of Bava Nizza Rosso Barbera—2001 and 2018 will contrast with the richness of lamb and polenta.

The dinner ends with the Torta della Nonna, a lemon tort cake paired with Chazalette’s & Co Rosso Vermouth.
