New Restaurants Inside Fontainebleau Las Vegas

It's official. The much-anticipated grand opening of Miami-inspired  Fontainebleau Las Vegas is on December 13, 2023. This latest Las Vegas landmark, worth $3.7 billion, is now taking room reservations and promises to usher in a new era of luxury. 

Inside the  67-story luxury resort are 150,000 square feet of casino and gaming space, 3,600 hotel rooms and suites, a 14,000 square foot fitness center, a 6-acre pool complex, and 36 restaurants, bars, and cafes.

Here are five  of the new restaurants you may want to try at Fontainebleau Las Vegas: -

Don’s Prime

Don’s Prime is an authentic steakhouse with soft lighting and dark wood furnishings reminiscent of the Rat Pack era. The menu at Don’s Prime features hand-selected steaks, including the American and Japanese Wagyu. 

Ito

If you love gazing at the skyline while enjoying delicious food, book a table at Ito on the 63rd floor of Fontainebleau Las Vegas. It's a 12-seat Japanese restaurant and the second one in the U.S., following the success of its pioneer New York City eatery. Ito in Las Vegas shall specialize in modern sushi delicacies prepared using seafood ordered directly from Japan. 

Cantina Contramar

Los Angeles-based Italian chef Evan Funke is opening a vintage-styled Italian restaurant inside Fontainebleau Las Vegas. Mother Wolf opts for a traditional menu using seasonal ingredients. Its wood-fired pizzas are handmade to have a wafer-thin crust and mouth-watering toppings. Other recipes making it to the menu include Stuzzichinis, portions of pasta, meat and fish, $20 cocktails, and signature beverages.
